Grandma's Recipes
Teacakes

Ingredients

3 cups of flour

½ teaspoon baking soda

1 teaspoon vanilla extract (optional - a little almond or lemon extract is great too)

¼ teaspoon ground nutmeg

2 eggs

1 cup of butter

½ cup of milk 

1 cup of sugar

 

Directions

  1. Preheat oven to 400 degrees.  

  2. Put parchment paper on a cookie baking sheet. 

  3. Sift flour into a large bowl.  

  4. In another bowl, whisk eggs, sugar, butter, milk and vanilla extract until smooth.  Pour wet ingredients into dry ingredients then stir just until combined.  Do not overwork.  The dough will be sticky.  

  5. Place dough on a lightly floured board (do not overwork).  Remember to flour hands.  

  6. Pinch off pieces of dough and roll it like a biscuit.  Smash down a little with fingers.  

  7. Bake about 7-10 minutes or until light brown.
     

Prepare and serve teacakes with lots of love, just like Grandma!
